Another really simple but delicious recipe for an inexpensive drink that is easy to prepare. The pearl barley in this gives the drink a really nutty flavour without overwhelming the lemon flavour. Some recipes suggest to cook the pearl barley but I find that this makes the drink cloudy and heavy, I much prefer the lightness of the soaked variety. It’s all down to taste at the end of the day.
Makes – around 1.5 litres
5 lemons, juice and zest
200g pearl barley
100g caster sugar
1.5 litres boiling water
In a very large bowl or jug (that will hold up to 2 litres) zest in the lemon rind and add the juice of all the lemons.Add the pearl barley and sugar, then pour in the boiling water. Sit well until the sugar has dissolved. Leave to soak over night.
The next day strain through a fine sieve and store in the fridge until needed. Serve over ice with a slice of lemon for added flavour.
This will keep in the fridge for 3-4 days.
