Aromatic pork mince in a lettuce cup

This is a great starter for an informal lunch or BBQ. It takes minutes to cook and is easy to eat standing up. Choose a lettuce such as little gem with plenty of small leaves that form the cups from which you can eat the dish in one mouthful. Make sure you taste it to ensure that it is spicy, slightly sour and a little salty for the perfect blend of flavours.

Makes: staters for 5 or main course for 2
Preparation: 15 minutes
Cook: 5- 10 minutes

Ingredients
400g pork mince
half tblsp vegetable oil
2 stems of lemon grass peeled and chopped
1 clove garlic peel and crushed
2 cm peice of ginger peeled and finely grated
1 tsp chilli powder
1 – 2 chillies finely chopped, deseeded if you don’t like heat
a large bunch or coriander, stems chopped and leave chopped but keep seperate
half a red onion diced small
1 tbsp fish sauce
1 tbsp soya sauce
half a lime, squeezed
1 tsp caster or brown sugar
3 little gem lettuces
salt and pepper

Method

Heat a wok or high sided frying pan on a medium heat until hot. Ad the pork and fry until all the pink colour is gone.  Ad the garlic, ginger, chilli and coriander stems and fry until fragrant. Add the chilli powder, fish sauce, sugar and soya sauce and fry until the liquid is incorporated into the pork mince. Season to taste and add more chilli powder if you want more heat. Add the lime juice tasting as you go it should be hot,slightly sour and salty. Finally add the red onion and the coriander leaves – the red onion gives crunch and the coriander the freshness of the dish

Cut the root ends off the lettuces and take the leaves off. Put the leaves on a serving plate and spoon the mince into the cups to serve.
